Ingredients

  • 8 parfait glasses
  • 2 pint fresh raspberries
Chocolate Pudding
  • 8 parfait glasses
  • 2 pint fresh raspberries
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 3 cup whole milk
  • 3 cup egg yolks, slightly beaten
  • 2 tablespoon butter
  • 2 teaspoon vanilla extract
  • 1/4 cup finely chopped unsweetened chocolate
Vanilla Mascarpone Cream
  • 8 parfait glasses
  • 2 pint fresh raspberries
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 3 cup whole milk
  • 3 cup egg yolks, slightly beaten
  • 2 tablespoon butter
  • 2 teaspoon vanilla extract
  • 1/4 cup finely chopped unsweetened chocolate
  • 2 cup mascarpone (18 ounces)
  • 2 cup heavy cream
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract

Preparation

Baking Directions:

To make the chocolate pudding:1.In a medium saucepan, combine the sugar, cornstarch, and salt.

Stir in the milk, blending well.

Cook over medium heat, stirring constantly, until the mixture boils and thickens, or about 2 minutes.

Remove from the heat.

2. Blend a small amount of the hot mixture into the egg yolks to temper them.

Pour the egg yolks into the saucepan, blending thoroughly.

3. Heat the mixture over high heat, stirring constantly, until it just begins to bubble, or about 3 minutes.

Remove from heat and stir in the butter, vanilla extract, and unsweetened chocolate.

Stir until the chocolate melts completely.

To make the vanilla mascarpone cream:1.In a large bowl, combine all the ingredients and whip until stiff.

To assemble parfaits:To each parfait glass, add a layer of chocolate pudding, then a layer of berries, and top with a layer of mascarpone.

Place in refrigerator and chill well.

Serve cold.
