To get the perfect crispy on the outside, chewy on the inside texture, baker Cailey Anne Buck of Cailey Anne Cookies in College Station, Texas pulls these out of the oven early and lets them finish baking in the pan.

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup (2 sticks) unsalted butter
  • 1 cup packed dark brown sugar
  • 1/2 cup granulated sugar
  • 1 tablespoon vanilla extract
  • 1 egg, plus 1 yolk
  • 2 cups regular semisweet chocolate chips

Preparation

Preheat oven to 350° F.

Sift flour, baking soda, and salt. Set aside.

Cream butter and sugars until light and fluffy. Beat in egg and egg yolk. Stir in vanilla. Add flour mixture in 3 additions; scraping down the bowl after each addition. Stir in chocolate chips.

Place cookie dough onto baking sheets lined with parchment paper, about 2 inches apart.

Bake for 8 minutes or until edges are barely golden (will look under baked). Cool on baking sheets for 10 minutes before transferring to wire racks to cool completely.
