Chocolate biscuit bread pudding

Ingredients

  • 2 cup whole buttermilk
  • 1/2 cup butter
  • 6 cup crumbled baked biscuits (about 10 biscuits)
  • 1/2 cup chopped pecans
  • 3 cup large eggs
  • 1 1/4 cup sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract

Preparation

Baking Directions:

Preheat oven to 350 degrees.

Lightly grease a 2-quart baking dish with nonstick cooking spray.

In a heavy saucepan, combine buttermilk and butter; cook over medium heat until butter melts.

Cool.

In prepared baking dish, combine crumbled biscuits and pecans.

In a large bowl, combine eggs, sugar, cocoa, cinnamon and vanilla.

Beat at medium speed with a mixer 1 minute.

Gradually stir in buttermilk mixture.

Pour mixture over crumbled biscuits.

Bake for 30 minutes.

Cover with foil to prevent over browning; bake 10 minutes longer or until a knife inserted in the center comes out clean.

Serve with sweetened whipped cream, and sprinkle with cocoa, if desired.
