Chocolate-banana pancakes



  • 1 cup all-purpose flour
  • 1 tablespoon white sugar
  • 2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon egg, beaten
  • 1 cup milk
  • 2 tablespoon vegetable oil
  • 2 tablespoon ripe bananas, peeled and cut into 1/8 inch slices
  • 1/2 cup bittersweet chocolate, cut into 1/4 inch chunks
  • Preparation

    Baking Directions:

    In bowl, combine the flour, sugar, baking powder and salt, and mix well.

    In a separate bowl, combine the egg and milk and then add the flour mixture, whisk slightly.

    The mixture will be slightly lumpy.

    Add the bananas and chocolate, mix.

    Heat a non stick fry pan over medium low heat and ladle in the pancake mixture to desired size with equal amounts of banana and chocolate chunks.

    Cook for 2 minutes or unitl pancakes bubble slightly and edges look dry.

      Carefully flip and cook additional 2 minutes.

    Repeat with rest of batter.

    Serve warm with maple syrup.
