Add smoky, savory and sweet flavors to chicken wings with a spicy chipotle buffalo sauce.
Remove chicken wings from packaging and pat dry. Season all over with salt, pepper and paprika, then place in a single layer on a baking sheet, refrigerated, until ready to grill.
For the wing sauce:
Puree the chipotle peppers in a blender until smooth. Add to a saucepan with the vinegar, honey, lime juice, butter and salt. Cook over medium heat until butter melts, then let to bubble for a minute, thickening slightly. Set aside to cool.
To cook and serve:1.
Light one side of your grill to medium-high heat (between 350°F-400°F) and leave one side of the grill "cold".2.
Start the chicken wings on the cold side of the grill, with the lid closed. Grill for 20 minutes, turning once.3.
Use the wing sauce to baste the side of the chicken wing that's facing you, then flip that side down onto the hot part of the grill. Baste the other side of the wing that's now facing up. Finish grilling the wings over a medium-high flame for about another 10 minutes, or until the sauce has caramelized, turning every few minutes.4.
Pour remaining sauce over wings and serve.
