There's nothing quite as satisfying and party-pleasing as a good queso dip. Try this spiced version from Siri Daly, inspired by Chili's.
- 1 16-ounce box Velveeta cheese, cut into cubes
- 1 15-ounce can of chili (no beans)
- 1 cup of cream
- 4 teaspoons chili powder
- 2 teaspoons paprika
- 1 teaspoon cumin
- 1/2 teaspoon cayenne
- 1 tablespoon fresh lime juice
- Salt and pepper to taste
- Tortilla chips, for serving
Place all ingredients in a medium pot over medium heat. Stir frequently until cheese melts, then reduce the heat and let simmer for 15 minutes. Serve with chips.
If you have no time to sit over a stove, through all of these ingredients into a slow cooker and cook on low for two hours.
