Chile-Lime Chips with Guacamole

Isabella is the first-born of all my cousins, while Daniella is the straight shooter who tells it how it is. They love making guac and chips when their friends come over!

Technique tip: Keep an eye out with cooking times for the chips because it really does depend on the power of your oven!

Ingredients

  • 12 corn tortillas
  • 1/2 cup vegetable oil
  • 1/4 teaspoon chipotle powder
  • 2 teaspoons finely chopped thyme
  • 2 teaspoons crumbled oregano
  • 1 large lemon, zested
  • 2 avocados, diced
  • 1 tablespoon distilled white vinegar
  • 1 lime, juiced
  • French sea salt

Preparation

Preheat oven to 400 F.

Brush each tortilla with oil and cut into 8 triangular chips.

Divide chips among 2 large baking sheets, making sure not to overlap the chips.

In a small bowl, combine chipotle powder, thyme, oregano and lemon zest.

Sprinkle seasoning mix on top of chips.

Place in the oven and bake on the top rack for 10 to 12 minutes until crisp.

In a medium mixing bowl, add the diced avocados and mash with a fork until smooth but still chunky. Add the vinegar and lime juice and mix to combine. Season with French sea salt.

8.

Remove tortilla chips from oven and season with salt while warm.
