Ingredients
- 8 ounce red onions
- 8 ounce tomatoes
- 14 ounce peaches
- 4 tablespoon apple cider vinegar
- 3 ounce brown sugar
- 3 ounce chicken breasts
- 10 ounce peaches
- 10 ounce olive oil
- 10 ounce chinese 5-spice powder
- 8 ounce red onions

- 1 pound baby carrots
- 1 pound snow peas
Preparation
Baking Directions:
Grill the tomatoes whole, until blackened.
Peel, seed, and coarsely chop.
Quarter and pit peaches, and grill lightly.
Let them cool, then peel, and coarsely chop.
Sautee onions until translucent, add the peaches and tomatoes, simmer for about 3 minutes.
Add the vinegar and brown sugar, and continue to cook over medium heat the peaches and onions break down, and have a syrupy consistency.
Remove from heat, and process in food processor.
Strain, and adjust seasoning to taste.
Keep warm.
Brush chicken lightly with olive oil, and grill until cooked through.
Sprinkle with the 5-spice power, brush on the BBQ sauce, return to grill, until sauce slightly dries and caramelizes.
Adjust seasoning to taste.
GarnishPeel carrots, leaving stem on.
Blanch in lightly salted boiling water.
Stem snow peas and blanch lightly.
Slice remaining peaches into 24 pieces and mark on the grill.
Keep warm.
Serving Directions:
Serve chicken breasts with the sauce, carrots, & snow peas.
Decorate with the grilled peach slices.
