Dress up a bag of rainbow slaw and turn it into an easy no-cook meal that's perfect for lunch or dinner.
Ingredients
Chicken cashew slaw
- 1 cup chopped rotisserie chicken
- 1 cup roughly chopped cashews
- 3-4 radishes, thinly sliced
- 1/4 cup coarsely chopped cilantro
- 1 12-ounce bag rainbow slaw
- 1 tablespoon sesame seed
Dressing
- 2 tablespoons regular or white balsamic vinegar
- 1 teaspoon coarse ground or whole grain mustard
- 1/4 cup olive oil
Preparation
Whisk together dressing ingredients. In a separate bowl, mix salad ingredients except for sesame seeds. Toss with dressing and then garnish with sesame seeds after plating.
