Chef notes
Ginger beer adds a little heat and a touch of sweet to a margarita. The tart lime juice rounds out the balance of flavors. It's perfect for sipping at an outdoor dinner and pairs especially well with grilled dishes.
Swap option: Try using Mezcal for a smoky margarita.
Ingredients
- 3 limes, 2 juiced and 1 cut into wedges for garnish
- Kosher salt
- Ice
- 1 cup high-quality gold tequila (tequila reposado)
- 2-3 bottles or cans ginger beer (I like Gosling's or Fever-Tree)
Preparation
Run a wedge of lime around the top edge of each glass and then dip it into a shallow plate of kosher salt.
Fill glass with ice and add the tequila. Top with ginger beer and lime juice. Serve with a lime wedge to garnish.
