I love this recipe because the shrimp taste super delicious when they're fresh off the grill and it is very easy to prepare. Just double, triple or quadruple the recipe depending on how many people you need to serve.

Technique tip: When cleaning the shrimp, use the tip of your paring knife to go up the back of the shrimp shell.

Swap option: Substitute carrot chips or fried shallots for garlic chips.

  • Grilled Shrimp

    • 3 jumbo shrimp, cleaned and butterflied
    • 1/4 clove garlic, minced
    • 1 teaspoon olive oil
    • 1 pinch crushed red pepper flakes
    • Salt and freshly ground black pepper, to taste
    • 1 lemon wedge
  • Parsley Salad

    • 1/2 cup parsley leaves, picked and cleaned
    • 1 tablespoon pickled red onion
    • Fried garlic chips, thinly sliced
    • 1 teaspoon olive oil
    • Salt and freshly ground black pepper, to taste

For the parsley salad:

Combine all ingredients for the parsley salad in a bowl.

For the grilled shrimp:

1. Preheat a grill or grill pan to medium-high heat.

2. Toss shrimp with the garlic, olive oil and pepper flakes. Season with salt and pepper.

3. Grill the shrimp for about 3-5 mins on each side.

To serve:

Place the parsley salad on a plate. Add the shrimp and serve with a wedge of lemon.
