Brown Rice Balls

If you find yourself with leftover rice, whip up a batch of these flavorful gems. Similar to Japanese onigiri, these are great to have on hand when you need a boost that’s a bit of a heartier snack.

Ingredients

  • 2 cups cooked brown rice
  • 1 cup finely chopped Swiss chard
  • 1 medium-size green onion or scallion, chopped
  • 2 tablespoons dried parsley
  • 2 tablespoons tahini
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon paprika
  • Black sesame seeds, to coat

Preparation

Mix all the ingredients, except the sesame seeds, in a bowl, then use your hands to form golf ball–sizeballs. Coat each ball with black sesame seeds. Set them aside at room temperature until ready to serve.
