Ingredients
- 1 tablespoon blackberry honey syrup (recipe follows)
- 3 ounces Prosecco, chilled
- 3 sprigs fresh thyme
- 1 cup honey
- 1 cup blackberries
- ½ cup water

With the heat of summer comes the best gift from the garden- bushels of sweet berries. From blueberries to strawberries and raspberries, desserts get prettier and drinks do too.
This week’s happy hour we’re enjoying the darkest of the bunch: blackberries. While any berry will work in this drink, the combination of sweet blackberries and thyme is summer in a glass. Add a little bubbly for a refreshing sprtiz and you’re all set to kick off the weekend. Clink.
Preparation
Make syrup:
In a small pot combine honey, water and blackberries. Bring to a simmer and cook for 5 minutes. Strain the berries through a fine mesh strainer smashing as you strain. Chill syrup and hold in the refrigerator for up to 3 weeks.
Make the drink:
In a glass add one tablespoon of blackberry honey syrup. Top with chilled Prosecco. Add fresh thyme for garnish.
