Ingredients
- 2 eggs
- 1 cup extra-virgin olive oil
- 1 cup almond milk (or another milk)
- 1 teaspoon vanilla
- 1 1/2 cup whole wheat flour (or gluten-free, coconut or quinoa flour)
- 1 tablespoon baking powder
- 3 cup uncooked oats
- 1 cup raisins
- 1 cup cranberries
- i cup chopped walnuts
- 1 teaspoon ground cinnamon
Preparation
Place eggs, extra-virgin olive oil and vanilla in a bowl and beat well.
In another bowl, mix together the flour, baking powder, oats, raisins, cranberries, walnuts and ground cinnamon.
Combine the two bowls together into a thick dough that's not too sticky. Roll the dough into small balls and place on a greased pan or papered cookie sheet. Press them to make flat.
Bake at 350 degree F for 40 to 45 minutes.
