Banh Mi Sliders



  • 1 1/2 pounds ground beef (chuck)
  • 1 1/2 teaspoon curry powder
  • 2 tablespoons red curry paste
  • 3 tablespoons fish sauce
  • Srirachaa Mayonnaise
  • 1/2 cup mayonnaise
  • 2 tablespoons Sriracha
  • 1 teaspoon tomato paste
  • 1 clove garlic, minced
  • 1/2 lime, juiced
  • Pickles
  • 1 medium carrot, shredded
  • 1 medium daikon, shredded
  • 1/2 cup rice vinegar
  • 1 cup water
  • 3 tablespoons sugar
  • 1 teaspoon salt
  • 1 can pickled jalapenos
  • 1 bunch cilantro
  • 12 potato hamburger slider buns, toasted

    These banh mi sliders are the perfect option to feed guests at a cocktail party or for homegating.


    For the burger patties:

    Combine all ingredients together. Cook a small piece of the mix to taste and adjust seasoning to your likeness.

    For the mayo:

    Whisk all ingredients together and set aside. This can be made 5 days in advance.

    For the pickles: 

    Whisk the vinegar, salt and sugar together and pour over the daikon and carrot. This can be made up to 2 weeks in advance.

    To assemble the slider:

    Cook the burgers until desired doneness. This can be done on a grill, in a sauté pan or in the oven.

    Spread the spicy mayo mixture on both sides of the bun, then place the patty inside and garnish with cilantro, pickled jalapenos and carrot and daikon.
