My kids are often asking for chips, and I'm often saying, "Only with your healthy lunch!" This recipe turns a junk food favorite into a balanced lunch or snack, and can be customized for any palate.

Technique tip: Do not over-fill the scoops. They will be easier to eat if you keep toppings to a minimum!

Swap option: Try using ground turkey or beef instead of chicken, or experiment with your favorite cheeses.

Ingredients

  • 1 bag Fritos Scoops, or other corn chip scoop
  • Shredded cooked chicken
  • Monterey Jack cheese, shredded
Optional toppings
  • Diced tomatoes
  • Diced avocados
  • Iceberg lettuce, shredded
  • Sour cream
  • Sliced black olives
  • Diced jalapeños
  • Salsa or hot sauce

Preparation

Preheat oven to 400°F.

Place Fritos Scoops on a greased baking sheet. Fill each chip with shredded chicken and top with cheese. Bake in the oven for about 5 minutes, until the cheese starts to melt.

Top each nacho bite with desired toppings and serve warm.
