My kids are often asking for chips, and I'm often saying, "Only with your healthy lunch!" This recipe turns a junk food favorite into a balanced lunch or snack, and can be customized for any palate.
Technique tip: Do not over-fill the scoops. They will be easier to eat if you keep toppings to a minimum!
Swap option: Try using ground turkey or beef instead of chicken, or experiment with your favorite cheeses.
Ingredients
- 1 bag Fritos Scoops, or other corn chip scoop
- Shredded cooked chicken
- Monterey Jack cheese, shredded
Optional toppings
- Diced tomatoes
- Diced avocados
- Iceberg lettuce, shredded
- Sour cream
- Sliced black olives
- Diced jalapeños
- Salsa or hot sauce
Preparation
1.Preheat oven to 400°F.
2.Place Fritos Scoops on a greased baking sheet. Fill each chip with shredded chicken and top with cheese. Bake in the oven for about 5 minutes, until the cheese starts to melt.
3.Top each nacho bite with desired toppings and serve warm.
