Bacon Waffles

Ingredients

    • 3-4 cups batter made from a gluten-free pancake/waffle mix
    • 16 slices of bacon

Preparation

  1. Make waffle batter according to package directions.
  2. Pre-heat a waffle iron. Cut bacon slices to the approximate length or width of a single waffle on the iron. When waffle iron is ready, ladle about ½ cup batter onto each waffle shape and immediately top with a couple slices of bacon per waffle.  Close the lid and cook to desired doneness.  
  3. Remove waffles from iron and put 1 - 2 waffles on each plate.  Serve hot with maple syrup on the side.
