Ingredients
- 1/2 cup mayonnaise
- 8 slices thick-cut white bread
- 1 cup shredded mozzarella cheese
- 1 cup shredded white cheddar
- 8 slices pepper jack, cheddar or white cheddar cheese
- 1 large green apple, cored and thinly sliced
- 8 slices thick-cut peppered cooked bacon
Chef notes
The grilled cheese sandwich is a classic for a reason. But every so often, I enjoy adding new flavors and textures to this versatile sandwich. The addition of peppered bacon and green apples adds a smoky and sweet taste. To give the sandwich its quintessential golden color and rich flavor, I use mayo instead of butter. Feel free to use a cast-iron skillet or griddle when cooking; just be sure your surface is hot!
Swap option: When it comes to toppings, don't just limit yourself to bacon and apple! Feel free to set up a toppings bar for your friends to create their own sandwiches. I recommend toppings such as pickled jalapenos, spinach, roasted peppers, sliced meats and an assortment of cheeses.
Preparation
1.Spread 1 tablespoon of mayo onto 1 side of each bread slice.
2.Warm skillet over medium heat. Place 1 slice of bread mayo-side down and top with a portion of shredded mozzarella, shredded white cheddar and sliced cheese. Add a couple apple slices and bacon, then place the second slice of bread onto the pile, mayo-side up.
3.Grill for 2 minutes on each side, or until golden brown. Once cooked, remove from the pan and slice diagonally. Serve immediately.
