Ingredients

Slaw
  • 1 cup green cabbage
  • 1 cup red cabbage
  • 1 cup carrots
  • 1 cup mint leaves
  • 1 cup cilantro leaves
Dressing
  • 1 cup green cabbage
  • 1 cup red cabbage
  • 1 cup carrots
  • 1 cup mint leaves
  • 1 cup cilantro leaves
  • 1/2 cup lime juice (about 4 limes)
  • 1/4 cup nam pla
  • 3 tablespoon fresh ginger
  • 2 tablespoon asian chile-garlic paste
  • 2 tablespoon brown sugar
  • 3 tablespoon white pepper

Preparation

Baking Directions:

In a large bowl, combine the cabbage, carrots, mint, basil, and cilantro, and mix well.

In a small bowl, whisk the dressing ingredients until blended.

Just before serving, pour the dressing over the slaw and toss until all vegetables and herbs are well coated.

Season to taste with salt and additional white pepper.

Tips:

The only trick here is to toss everything together at the last minute so the herbs stay fresh and bright.

This slaw is a perfect accompaniment to any type of grilled food, but we particularly like it with seafood.
