- 2 pound creamers c potatoes
- 1/2 cup olive oil
- 3 cup granny smith apples
- 1 cup onion
- 4 clove garlic
- 1/2 cup almonds
- 1 tablespoon curry powder
- 1 tablespoon lemon
- 2 cup spinach
- 2 cup salt and pepper
Wash the potatoes and cut into quarters, pat dry.
Pour olive oil in a pan and sauté the potatoes on medium heat for 12 minutes.
While waiting, cut the apples in 1-inch cubes.
Add in the apples, onion, garlic, almonds and curry powder, and cook for additional 5 minutes.
Take off the heat and season with salt and pepper.
Add in the lemon juice and spinach.
Toss well and serve.
