Al Roker's Pimento Cheese Dip

Al's simple, one-bowl recipe that mixes cheddar, pimentos, mayo, Sriracha and onion, might be the easiest (and cheesiest!) dish you'll serve to your guests on Super Bowl Sunday.


  • 3 cups sharp cheddar
  • 1/2 cup drained pimentos
  • cup mayo
  • 1/2 tablespoon Sriracha
  • 1/2 tablespoon onion, minced on a box grater
  • Salt and pepper to taste
  • Ritz crackers, for serving


Mash all ingredients together with hands in a large bowl. Chill, preferably overnight, and serve with Ritz crackers.
