Ingredients

  • Nonstick cooking spray
  • 4 pounds boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 1 teaspoon salt, plus more for finishing
  • 1 teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 4 large eggs
  • 1 stick (1/2 cup) butter, melted
  • 3 sleeves Ritz crackers, crushed

    This extra crispy oven-fried chicken is the ultimate dish for all the fried chicken lovers out there. The cracker crust provides a salty-yet-sweet flavor that's hard to resist.

    Swap option: Use crushed breadcrumbs or tortilla chips instead of crackers.

    Preparation

    1.

    Preheat the oven to 450°F and lightly coat a wire rack on a baking sheet with cooking spray.

    2.

    Slice chicken breasts lengthwise into four 1-inch strips (tenders) and pound flat to 1-inch thickness.

    In another bowl, whisk together flour, salt, pepper and garlic powder.

    4.

    Whisk eggs and 1 tablespoon water in a separate bowl.

    5.

    In another shallow bowl, mix together the melted butter and crushed crackers.

    6.

    Dip chicken tenders into flour mixture, then egg mixture and finish with the melted butter and cracker mixture.

    7.

    Place the coated chicken tenders on the prepared wire rack on the baking sheet and bake for 16 minutes, flipping them halfway through. To finish, place under the broiler for 2 minutes.

    8.

    Once out of the oven, finish by seasoning with kosher salt. Serve immediately or at room temperature.
