Serves 6-7 Servings
- 1/2 head boston lettuce, washed, dried & chopped
- 3 head hearts of palm, sliced
- 1/2 cup feta cheese
- 1/2 cup chic peas
- 1/2 cup cucumber, peeled, chopped & seeded
- 8 cup cherry tomatoes, halved
- 1/2 cup each roasted red and yellow peppers, peeled & diced
- 3 sprig mint, shredded
Combine all ingredients.
Add aged balsamic vinegar, garlic infused olive oil, and salt & pepper to taste.
