Buckwheat, soba, potato ... there's a type of noodle for everyone, even the carb-conscious (hello, shirataki!).

On Oct. 6, National Noodle Day, we pay homage to the humble noodle, which is perfect for dressing up with a variety of sauces and soups.

P.F. Chang's Home Menu showed their noodle appreciation by commissioning a portrait of our own Al Roker, made entirely of -- you guessed it -- noodles.

The piece was made using soba and lo mein, and took artist Julia Greene more than 20 hours to create. But why a portrait of Al?

"Al has always appreciated good food, and his animated personality makes him the perfect subject for a portrait - even when that portrait is made of noodles!" said spokesperson Dan Mazei.
