- 2 balls fresh mozzarella (about the size of a baseball), sliced 1/4 inch thick
- 2 medium size, firm tomatoes (about the size of a baseball), sliced 1/4 inch
- 1/4 cup olive oil
- 4 slices country white artisan bread
DIRECTIONS Take a 2 1/2-inch round cookie cutter and carefully cut a hole in the center of each slice of bread. Use the cookie cutter to cut the mozzarella and tomato to the same size. Layer a slice of cheese, a slice of tomato and another slice of cheese and place into the center of each slice of bread.
Heat olive oil in a large non-stick skillet on medium heat. Carefully lay the bread with tomato and cheese in the pan. Toast each side of the sandwich for 3-4 minutes until golden brown.
