INGREDIENTS

Serving 4

  • 8 ounces of Patty Pan squash
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 large lemon (optional)
  • 1/2 bunch of mint, leaves chopped
  • Sea salt and pepper

DIRECTIONS

Heat a roasting pan with the oil and butter throw in the halved patty pans, mint, salt and pepper. Roast in a hot oven 425F for 20 -25 minutes or until golden and if you like give a little squeeze of lemon juice to taste. Check the seasoning and serve.
