Have you ever considered how much waffles have in common with bread? Grab two waffles, add a filling, and you’ve got a sandwich. And as with traditional bread versions, the options for what you put in the middle are just about limitless. These 12 ideas include classic sandwich combinations, such as peanut butter and jelly and ham and Swiss, as well as more original creations like apricot jam with sharp cheddar and ricotta with strawberries and toasted almonds. All the recipes are quick and easy to prepare, making them ideal for busy mornings. And since they’re sandwiches, they can be wrapped and enjoyed on the go. They even make good lunch and snack options.

Each recipe is designed to serve four people with each person getting a sandwich made from two waffles. Feel free to scale the quantities up or down as needed. You can make any of these sandwiches with homemade, from a mix or frozen waffles, including whole wheat and whole grain options. If making waffles from scratch or with a mix, it may be easier to prepare them first and keep them warm in a 200°F oven while you get your filling ready.

1. Ricotta, strawberries and almonds: Cook 8 waffles per your recipe or the package instructions. Spread 2-3 tablespoons part-skim ricotta on 1 side of 4 waffles. Arrange thinly sliced strawberries and toasted sliced almonds on the ricotta then top with the remaining plain waffles.

2. Turkey, pepper jack cheese, avocado and roasted red peppers: Cook 8 waffles per your recipe or the package instructions. Spread mayonnaise on 1 side of each waffle (optional). Layer each waffle sandwich with 1 slice of roasted turkey breast, 1 slice of pepper jack cheese, 1/4 of a sliced avocado and 2-3 thin slices roasted red pepper.

3. Peanut butter and jelly: Cook 8 waffles per your recipe or the package instructions. Spread peanut butter or another nut butter on 1 side of 4 waffles. Spread your favorite jam or jelly on 1 side of the remaining plain waffles, then layer the waffles to create sandwiches.

4. Apple and brie: Cook 8 waffles per your recipe or the package instructions. Meanwhile, halve, core and thinly slice 1 apple. Cut the rind off about 4 ounces of brie cheese, then cut it into thin slices. Layer each waffle sandwich with slices of apple and cheese. Place the sandwiches on a foil lined baking sheet and warm them for a few minutes in a 350°F oven to melt the cheese.

5. Bacon, avocado and tomato: Cook 4 slices of bacon until crispy, then let cool and cut each slice in half crosswise. Meanwhile, cook 8 waffles per your recipe or the package instructions. Spread mayonnaise on 1 side of each waffle (optional). Layer each waffle sandwich with 1/4 sliced avocado, 1/4 sliced tomato and 2 half slices of bacon.

6. Nutella and banana: Peel 2 bananas and cut them into 1/4-inch-thick slices. Cook 8 waffles per your recipe or the package instructions. Spread Nutella on 1 side of 4 waffles. Arrange banana slices over the Nutella, then top with the remaining plain waffles.

7. Ham and Swiss cheese: Cook 8 waffles per your recipe or the package instructions. Layer each waffle sandwich with 1-2 slices of deli ham and 1-2 slices of Swiss cheese. Place the sandwiches on a foil lined baking sheet and warm them for a few minutes in a 350°F oven to melt the cheese.

8. Apricot jam and sharp cheddar: Cook 8 waffles per your recipe or the package instructions. Spread apricot jam on 1 side of 4 waffles, then top with thinly sliced sharp cheddar and the remaining plain waffles. Place the sandwiches on a foil lined baking sheet and warm them for a few minutes in a 350°F oven.

9. Egg, sausage and cheese: Slice 4 breakfast sausage links in half lengthwise, then cook according to the package instructions. Meanwhile, scramble or fry 4 large eggs and cook 8 waffles per your recipe or the package instructions. Layer each waffle sandwich with 1 egg, 1 slice of American or cheddar cheese and 2 pieces of sausage.

10. Tomato, provolone and oregano: Cook 8 waffles per your recipe or the package instructions. Top 4 waffles with 1 slice of provolone cheese. Thinly slice 1 large tomato, then divide it among the 4 cheese-covered waffles and sprinkle with fresh or dried oregano. Add a second slice of cheese to each sandwich and top with the remaining plain waffles. Place the sandwiches on a foil lined baking sheet and warm them for a few minutes in a 350°F oven to melt the cheese.

11. Cream cheese and pepper jelly: Cook 8 waffles per your recipe or the package instructions. Spread cream cheese on 1 side of 4 waffles, then top with pepper jelly and the remaining plain waffles. Place the sandwiches on a foil lined baking sheet and warm them for a few minutes in a 350°F oven.

12. Bacon and jam: Cook 4 slice of bacon until crispy, then let cool and cut each in half crosswise. Meanwhile, cook 8 waffles per your recipe or the package instructions. Spread your favorite jam on 1 side of each waffle. Arrange 2 half slices of bacon on 4 waffles then top with the remaining waffles.
