"Top Chef" judge Tom Colicchio — recently named the nation's top chef by the James Beard Foundation — is sharing smart ideas for cooking light and eating right in the summer months. He says one key to doing that is to make good use of vinaigrettes beyond salads.
Here he explains how to make a yummy lemon vinaigrette and a lemon-rosemary vinaigrette. He serves up his poached shrimp appetizer with the lemon vinaigrette, and then uses the lemon-rosemary vinaigrette to prepare braised red snapper. Enjoy!
