Vegan chef and cookbook author Jenné Claiborne is stopping by the TODAY Kitchen to make a few of her favorite healthy recipes from her book "Sweet Potato Soul: 100 Easy Vegan Recipes for the Southern Flavors of Smoke, Sugar, Spice, and Soul." Believe it or not eggplant can be a delicious, healthy and kind replacement for meat-based bacon. It's also so easy to make. I eat it on everything from breakfast pancakes to sandwiches.

You can make these tasty muffins once and munch on them for days. I even like to double the recipe to make a second batch to keep in the freezer.
