Salads are super and grilled veggies are grand, but there's another way to make the most of summer's bounty without sweating over a complicated meal. This simple vegetable chowder takes all the comfort of your favorite hearty soup and brightens it up—and lightens it up —with fresh flavors. Instead of cream, zucchini helps thicken the broth while still keeping things healthy. And it all comes together in one stockpot for a meal that practically makes itself. For a creamier texture, add a splash of cream or half and half, or leave it as is for a filling but refreshing summer soup. Just chop, simmer, and serve! And if you end up with leftovers, use them in a delicious creamy chicken casserole.
