With meal kits from companies like HelloFresh and Blue Apron growing in popularity and even companies like Chick-fil-A and Weight Watchers testing their own versions, almost-instant meals seem to be a top priority for today’s super busy home cooks.

This week, Target introduced a line of meal offerings from its Archer Farms brand to appeal to customers who they said are looking for time-saving ways to put meals on the table. In a post on Target’s blog, the brand said that more than half of dinners are planned within just an hour of eating them.
Archer Farms Meal Offerings provide cooks with “easily accessible, trend-forward and globally inspired” options that include meats, salads, sides, soups and pastas for between $2.99 and $8.99 per item. There are more than 100 different products.
The idea is to mix and match items like sauces, ready-to-heat grilled fajita chicken strips, cheeses and veggies to quickly create a lunch or dinner.
The items in the lineup we're most excited to stock our freezers with include Vegetarian Pumpkin Bisque, Mexican Street Corn Salad and Mushroom Kale Ravioli.
The items are available now both in-store nationwide and on Target.com.
To give you some quick-and-easy din-spiration, Target put together some recommended recipes using the new items:
Taco Tuesday Redo
Serves four
Ingredients:
- Archer Farms Pork Carnitas
- Archer Farms Mexican Street Corn Salad
- One bunch of fresh cilantro
- Corn or flour tortillas
Preparation:
Microwave pork according to package directions.
Warm tortillas if desired.
Fill tortillas with shredded pork and top with Mexican Street Corn salad and fresh cilantro.
Lemon Zest Pasta
Serves four
Ingredients:
- Archer Farms Burrata Lemon Zest Herb Ravioli
- Archer Farms Shredded Rotisserie Chicken
- Archer Farms Pesto Sauce
- Archer Farms Shaved Parmesan Cheese
- 1 lemon
Preparation:
Cook ravioli in boiling water according to package directions. Drain; return to saucepan.
Microwave shredded chicken according to package directions.
Add cooked shredded chicken, pesto sauce and zest of half a lemon to saucepan. Stir to combine.
Top with shaved Parmesan.
