If possible, follow the recipe and use Madras curry, a blend which typically contains curry leaves, turmeric, coriander, cumin, cinnamon, cloves, chili pepper, bay leaves, fenugreek, allspice, and black pepper. The result is great flavor that is neither too spicy nor too mild.
