This week: Roasted Sea Scallops, from Great Bay restaurant in Boston, Massachusetts

Located in Boston's Kenmore Square at the elegant Hotel Commonwealth, the Great Bay restaurant hosts a menu shimmering with the best of the sea. Winner of the Esquire Magazine award for Best New Restaurant in 2003, Great Bay executive chef Jeremy Sewall emphasizes fresh ingredients "Let nature and what she offers provide the direction for creativity,” says Sewall. “That’s what I’ve learned and it’s all I wish to showcase at Great Bay.” 

More about the chef:

Jeremy Sewall, a native of upstate New York, got his love for seafood through childhood summers spent in Maine with his family. After graduating with honors from the Culinary Institute of America, he returned to Maine to work at the White Barn Inn, in Kennebunkport, before heading to Europe. After honing his skills at various restaurants in London and Amsterdam, he returned to the U.S. for stints at the famed L’Espalier restaurant in Boston and the Lark Creek Inn, in Larkspur, California. He has been at Great Bay since its opening in May of 2003.
