This week: Wild Mushroom Risotto from the Pritikin Longevity Center in Aventura, Florida

A typical day at the Pritikin Longevity Center, a nutrition and exercise facility in Aventura, Fla., may include stretching while watching the sunrise over the Atlantic Ocean, cooking demonstrations, classes on relaxation, stress-management, nutrition, maybe a little aqua aerobics or circuit training — and delicious low-fat, high-fiber meals prepared by Chef Drew Rosen..

About the chef:

As befits  someone cooking for those hoping to improve their eating habits, Pritikin executive chef Drew Rosen has a considerable background in healthy cuisine and natural foods. At the Misty Fjords Lodge in Alaska, the Eastside Oyster Bar in California, the Scoozime Restaurant in Florida, and most recently as the chef-owner of Natural Foods Restaurant in Hollywood, Fla., Rosen has been committed to healthy dining. He insists on flying fish in overnight and using the freshest produce he can find.
