At the Misty Fjords Lodge in Alaska, the Eastside Oyster Bar in California, the Scoozime Restaurant in Florida, and most recently as the chef-owner of Natural Foods Restaurant in Hollywood, Fla., Rosen has been committed to healthy dining. He insists on flying fish in overnight and using the freshest produce he can find.
