We’re used to seeing Lester Holt deliver the news on “NBC Nightly News” and “Dateline NBC.” But once in a while, we also get to see his softer side — like when he gushed over grandparenthood on “The Tonight Show Starring Jimmy Fallon.” This time, however, it all started with waffles.
In abehind-the-scenes interview with the digital food magazine The New Potato, Holt opened up over breakfast at New York City's Sant Ambroeus cafe about bringing the lasting impact of delivering difficult stories, being a Hoda Kotb fan (we are, too!), and, of course, his perfect food day.

When asked about bringing his work home with him after reporting on tough stories, Holt replied, “Sure I do… When you’re in places where people are going through tragedy or suffering you can’t help but take it home with you. I believe that compassion is a big part of what makes us better journalists and better broadcasters.”
But the anchor also opened up about life at NBC. When it comes to Kotb, and her new role as co-anchor of TODAY, Holt admitted to being “a huge Hoda fan.”
“When you see her and how warm and affectionate she is, her personality, that’s the person we see in the hallway,” Holt said. “We were all delighted that she could step into the role so seamlessly."
Judging by his perfect food day, Holt is also a huge fan of something else: waffles!
“It’s got to start with waffles. I love waffles, Belgian style waffles. Fresh strawberries and blueberries and real, warm maple syrup and crisp bacon,” Holt said of his perfect breakfast.
For lunch, the veteran journalist says he enjoys "a really nice grilled chicken sandwich on ciabatta," often with avocado, potato leek soup, and a glass of rosé wine. "For dinner, I can go a lot of ways. Mexican’s my favorite — chips and guacamole and a chicken enchilada with verde sauce," he said.
