Move over deep-dish, Neapolitan and New York-style pizzas! We have a new favorite. In this episode of Hot Dish, we spotlight pizza alla pala, a Roman-style pizza that's just arrived stateside at Eataly and is the hottest slice in New York City.
It's called pizza alla pala because it's cooked on a wooden peel called a pala in Italian. The dough is made with three stone-ground flours from Italy, and has an irresistible crispy, chewy texture. Some of the pizzas are baked with traditional ingredients like hand-crushed tomatoes and fresh mozzarella. Others are more like flatbreads and are covered end-to-end with raw ingredients like glorious ribbons of prosciutto crudo, peppery arugula, creamy stracciatella cheese and cherry tomatoes. Ever since we tasted these beauties we can't get them out of our heads. WATCH the video and just try not to crave this amazing pizza.
