Move over deep-dish, Neapolitan and New York-style pizzas! We have a new favorite. In this episode of Hot Dish, we spotlight pizza alla pala, a Roman-style pizza that's just arrived stateside at Eataly and is the hottest slice in New York City.

It's called pizza alla pala because it's cooked on a wooden peel called a pala in Italian. The dough is made with three stone-ground flours from Italy, and has an irresistible crispy, chewy texture. Some of the pizzas are baked with traditional ingredients like hand-crushed tomatoes and fresh mozzarella. Others are more like flatbreads and are covered end-to-end with raw ingredients like glorious ribbons of prosciutto crudo, peppery arugula, creamy stracciatella cheese and cherry tomatoes.
