Whether it's quickly preparing proteins in a slow cooker or getting dinner on the table in under 30 minutes, these dishes are sure to please any taco-loving crowd.

You can start celebrating Taco Day first thing in the morning with this easy recipe that can be made with any leftover cooked vegetables you have on hand, including roasted broccoli, cauliflower, green beans, spinach, corn and peas.
It doesn't get much easier than this Crock-Pot taco recipe. Just put chicken thighs, salsa and a few herbs and spices in your slow cooker and simmer until the meat is tender. Then pile it into tortillas with your favorite toppings and enjoy!
Sure, there are fancier fillings for tacos than ground beef — but there are few that are just as easy and satisfying — as this recipe from chef Ryan Scott proves. These tacos are also great with ground turkey.
If you'd prefer to skip the meat altogether, give these scrumptious cauliflower tacos a try. To make them, simply mix cauliflower rice (which you can make or buy) with taco seasonings and a handful of other ingredients, then bake until it turns into a crumbly, savory mixture that's perfect for piling into tortillas.
