THIS WEEK: Gratin de Macaroni from Bistro Campagne, in Chicago, Ill.

This is macaroni as you’ve probably never seen it before!

Rich and creamy (and made with Gruyere and other delicious cheeses), it is a popular item on the menu of the Bistro Campagne, a French-style restaurant in Chicago.

About the chef:

Chef Michael Altenberg says his approach to cuisine comes from influences both here and in Italy and France, countries whose cooking most inspires his work.

His commitment to the use of organic, sustainably grown and raised ingredients has grown over the years, and today is a benchmark of his work as a chef and restaurant owner.

Bistro Campagne opened in Lincoln Square in the summer of 2002 and has won plaudits from critics and customers. Altenberg follows a straightforward philosophy: “Buy the finest ingredients available, prepare them in the simplest fashion and make great tasting food.”

(PLEASE NOTE: Ingredient prices are estimates and based on national averages. Amounts listed are for one portion. Increase proportionately according to number of portions desired.)

Gratin de Macaroni

($15 at Bistro Campagne; cook-at-home cost is $4.19.)
