Kai Chase was Michael Jackson's personal chef for the past six months and is sharing on TODAY two of his favorite recipes: organic vegetable-fruit juice and an organic seared Ahi tuna salad nicoise.
Organic juice
- Beets
- Carrots
- Celery
- Red apple
Clean and cut into quarters. Use desired amounts of each. Blend together the listed raw organic ingredients.
Organic seared Ahi tuna nicoise salad
- Seared Ahi tuna seasoned with Herbes de Provence
- Haricot verts
- Nicoise olives
- Roasted red potatoes
- 1 hard-boiled egg
- Field greens
Plate the listed ingredients.
For the dressing:
- 2 teaspoons of minced shallots
- 2 teaspoons of dry basil
- 1/3 cup of red wine vinegar
- 1 teaspoon of Dijon mustard
- 4 anchovies, chopped
- Salt and pepper to taste
Combine the listed ingredients for a vinaigrette.
