Even though I grew up in the Middle East, where falafel pretty much courses through everyone's veins, I wasn't a fan — I'd had too many chalky, dry specimens. But one day, inspired by the contents of my freezer, I decided to see what happened when I made them from frozen peas. Not only was I enchanted by their tender texture, but that bright green interior won me for life. Now that I have a daughter (and another one on the way!) this makes for a fun way to take her favorite vegetable and turn it into more than just a side dish.
