Seasonal Citrus ParfaitTom Valenti

serves 4

1. Supreme the citrus. (Remove the skin, white pith and pits and with sharp knife cut the central membrane out. The result is “clean meat” of the fruit.)

2. In 4 tall see-through glasses divide 2 ounces of yogurt into each glass/cup.

3. Divide up the assorted citrus sections into each glass/cup. This is very colorful.

4. Top with granola and serve.
