It’s the day after Thanksgiving and you’re thinking... “what should I do with all of these leftovers.?” Well, Tyler Florence of the Food Network has some quick and simple recipes to help stretch that meal an extra day or two. Check out the frugal menu below.
TURKEY QUESADILLAS Tyler Florence
Yield: 4 servings
For the quesadilla:
Preheat the oven to 400 degrees.
To a large sauté pan over medium heat, add olive oil. Add the onions and cook until caramelized, about 10 minutes. Add the turkey to the onions. Sauté for 3 minutes. Season with salt and pepper. Add the poblano pepper and the garlic and sauté. Remove from the heat and stir in the oregano, cilantro and scallions. Taste for seasoning.
Wrap tortillas in a slightly damp towel and heat in the microwave for 30 seconds to 1 minute. Remove from the microwave and lay 4 of the tortillas on a clean working surface. Sprinkle a little of the cheese on each tortilla. Divide the turkey mixture among the 4 tortillas. Top each with the remaining cheese. Place another tortilla on top of each pile to create 4 stacks of 2 tortillas. Press down firmly on each quesadilla. Lightly oil a non-stick baking sheet. Place the quesadillas on the baking sheet. Brush a little more oil on the top tortilla. Place in the oven and bake until the cheese is melted and the tortillas are golden brown, about 10 minutes.
LIME CREMA
Combine sour cream and lime juice and mix well. Refrigerate for 1 hour before serving.
FRESH TOMATO SALSA
Combine all ingredients in a bowl and mix well. Let sit at room temperature for 30 minutes before serving.
Cut each quesadilla into 4 pieces and place on a plate. Garnish with lime crema, fresh tomato salsa and a cilantro sprig.
