THIS WEEK:  Pan-Seared Halibut with Maine Shellfish Ragout, from The Maine Dining Room at the Harraseeket Inn in Freeport, Maine

Freeport, Maine, is best known as the headquarters of L.L. Bean, the catalog company that started by outfitting hunters and anglers. It’s also home to the four-diamond Harraseeket Inn, located just a couple of blocks north.

Maine, of course, is also famous for its seafood, so it’s perhaps no surprise that fish and shellfish are front-and-center on the menus of the inn’s two restaurants, the fancy Maine Dining Room and the more casual Broad Arrow Tavern.

And it’s from the Maine Dining Room that this week’s recipe, Pan-Seared Halibut With Maine Shellfish Ragout, is “stolen.” Created by chef Theda Lyden, it’s sure to melt in your mouth and impress guests.

About the chef:

Lyden, who has a degree in art education and has pursued graduate work at Indiana University and the Maine College of Art, has followed a culinary career for more than 25 years. The last 14 of those have been spent at the Harraseeket Inn.

A stickler for fresh and wholesome ingredients, Lyden maintains close ties with the local organic growing community through her own farmer’s market business as well as with the Maine Organic Farmers and Gardeners Association. She also continues to be active in the local arts community.
