The Best Dal Ever

Dal was always on the table when I was growing up thanks to my mom. I wanted to create my own signature dal recipe and this is it! It's creamy and rich from the coconut milk, but still nicely tangy and bright from the lemon juice. I also love adding in a bit of sneaky spinach to get more greens into my life.

I like to add a bunch of textural elements to my kale salads because the sturdiness of this leafy green really holds its own with a variety of toppings. I layer on the crunch with homemade croutons (perfect for any leftover bread that's getting a little stale) and sunflower seeds. Then I highlight the creaminess of the tahini dressing with buttery avocado and white beans.
