I’ve never been able to understand people who skip breakfast. Let’s put aside the fact that it’s healthier to partake in the meal and just go straight to what in the world do those folks pair with their coffee? However, I do understand not being able to fit preparing a healthy breakfast into a busy morning routine. It’s why a breakfast that makes itself overnight in your refrigerator is the way to go, especially in the summer months when you want light, cool and delicious. These recipes all have a 5-minute prep time, meaning you can throw them together during the commercial break of your reality TV addiction. Then, in the morning, you have a healthier grab-and-go option then, let’s say, a glazed doughnut. If you ask me, these simple morning solutions make carving out time for breakfast worth it.
