Hoping to score big at your Super Bowl party? Here are Laura Vitale's recipes for one-pot chili, homemade guacamole, maple cornbread muffins and more. 

Serves 4-6


  • 1/2 lb of sweet Italian sausage, removed from the casing
  • 1/2 lb of ground beef
  • 1 large onion, diced
  • 1 red bell pepper, seeded and diced
  • 1 jalapeño pepper, seeded and finely chopped
  • 3 cloves of garlic, minced
  • 2 tablespoons of chili powder
  • 2 teaspoons of ground cumin
  • 1 1/3 tablespoon of brown sugar
  • 2 tablespoons of tomato paste
  • 1 teaspoon of dried oregano
  • 3/4 cup of red wine
  • 3/4 cup of beef stock
  • 1 28-ounce can of chopped tomatoes
  • 1 15-ounce can of red kidney beans, drained and rinsed
  • 2 tablespoons of olive oil
  • Salt and pepper, to taste

1. In a large pot over medium high heat, cook together ground beef and the sausage. Add the chopped bell pepper, onion, jalapeño and garlic, season with salt and pepper, and cook for about 7 to 8 minutes or until the veggies cook down and start to develop some color.

2. Add the wine, chili powder, cumin, brown sugar, tomato paste and oregano and give it a nice stir. Cook for about 1 minute, then add the chopped tomatoes, kidney beans and beef stock and bring to a boil. Reduce the heat to medium low and cook for a couple hours.

3. Taste for seasoning and serve over rice with some sharp cheddar shredded over the top.


Serves 4-6


  • 2 avocados
  • 5 thin scallions, trimmed and finely chopped
  • Juice of one lime
  • 3 tablespoons of finely chopped cilantro
  • 1 jalapeño, seeded and finely minced
  • Salt and pepper, to taste

1. Cut the avocados in half and remove the stone, scoop the flesh into a bowl and using a fork, mash it to your desired consistency (I prefer mine a big on the chunky side).

2. Add remaining ingredients and mix well. Serve with tortilla chips and enjoy! 


Maple cornbread muffins
Makes 12 muffins
Prep time: 10 minutes
Cook time: 20 minutes


  • 1 cup of flour
  • 1 cup of cornmeal
  • 1/3 cup of maple syrup
  • 3 teaspoons of baking powder
  • 1/2 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 1 cup of buttermilk
  • 1/4 cup of unsalted butter, melted
  • 1 egg

For the maple butter:

  • 1/4 cup of unsalted butter, softened at room temperature
  • 1 tablespoon of maple syrup

1. Preheat the oven to 375 degrees and spray a muffin tin with some non-stick spray, set aside.

2. In a large bowl, mix together the flour, cornmeal, baking powder, baking soda and salt, set aside.

3. In a bowl, whisk together the buttermilk, maple syrup, melted butter and egg, pour this mixture into the bowl with the dry ingredients and mix until all combined.

4. Fill your muffin tin using an ice cream scoop, pop them in the oven and bake them for about 20 minutes or until fully cooked through.

5. When you're about ready to serve, mix together the butter and maple syrup and smear some of this over the warm muffin. 

Cakey brownies
Serves 8 to 10
Prep time: 10 minutes
Cook time: 30 minutes


  • 1/4 cup of unsalted butter, softened at room temperature
  • 1/2 cup of bittersweet chocolate chips or any kind of baking chocolate, melted either in a microwave or over a double boiler
  • 3/4 cups of granulated sugar
  • 1 tablespoon of corn syrup
  • 2 eggs
  • 2 tsp of vanilla extract
  • 1 tsp of instant espresso powder
  • 3 tablespoons of whole milk, lukewarm
  • 1/2 cup of all-purpose flour
  • 1/2 teaspoon of baking powder
  • 1/4 teaspoon of salt

1. Preheat the oven to 350 degrees, spray the bottom of an 8x8 inch baking dish and lay the bottom with parchment paper, set aside. Also place one of the oven racks in the center of the oven.

2. In a small bowl, mix together the flour, instant espresso, salt and baking powder, set aside.

3. In a large bowl, whisk together the butter, sugar and corn syrup, add the eggs and vanilla and milk and mix together well.

4. Add the melted chocolate and whisk until the mixture is thick and creamy.

5. Add the dry ingredients and mix them in until they are well blended.

6. Scrape the batter into the prepared pan and bake it for 30 minutes.

7. Cool completely before cutting.
