When steaks come off the grill looking all charred and gorgeous, it'll be tough to resist digging in right away. But letting them rest is essential. Otherwise, a lot of the lovely, tasty juices will spill out when you slice in.
Carson loves this recipe because it reminds him of the creamy potato gratin dishes he grew up with. While those are indulgent and delicious, he prefers to find something just as tasty but slightly less caloric. Super thinly sliced zucchini and yellow squash, sprinkled with fresh garlic and topped with Parmesan and bread crumbs make this dish feel decadent, and trust me, you won't miss the butter and cream!
