5 days of delicious dinners: Steak tacos, one-pot pad Thai and more

This week’s menu plan doesn’t have a “hook.” It’s just good, solid recipes we hope you and your family will love and possibly incorporate into your repertoire of go-to dishes. The arctic char dish is sure to be a winner because it’s from Rick Moonen (who’s basically the Grand Poobah of fish cookery) and because it’s arctic char, which is on the list of best choices for sustainable fish, you can feel extra good about it. The One-pot Pad Thai recipe calls for linguine, which is fine, if not super authentic, but most supermarkets carry rice noodles these days, so feel free to go full-Thai if the spirit moves you—just cook the rice noodles according to the package, then quickly stir fry with the remaining ingredients. And please don’t skip the fish sauce because it’s the magic ingredient that makes dishes from this region sing out loud (not really, if a bowl of singing noodles sounds creepy). If you’re feeling handy and ambitious, by all mean trying making your own corn tortillas for the tacos. It’s easier than you think, especially if you’ve got helpers (here's a great recipe from TODAY Food Club member Yvette Marques), but store bought tortillas are perfectly fine.

  • 4 limes
  • 1-2 heads of garlic
  • 1 white or yellow onion
  • 1 small red onion
  • 1 green bell pepper
  • 2 red bell peppers
  • 2 bunches cilantro
  • 1 bunch scallions
  • 4 large tomatoes
  • 4 tomatillos
  • 1 avocado
  • 1 jalapeño
  • 1 head Napa or Savoy cabbage
  • 3 large carrots
  • 1 medium cucumber
  • 2-inch piece fresh ginger
  • Mung bean sprouts (optional)
  • 1 (15 1/2-ounce) can garbanzo beans
  • 1 (15 1/2-ounce) can red kidney beans
  • 1 (15 1/2-ounce) can black beans
  • Vegetable broth or vegetable broth base plus added water (approximately 4 cups)
  • 1 (14 1/2-ounce) can diced tomatoes
  • 1 tablespoon yellow cornmeal
  • 2 cups masa harina corn flour OR pre-made corn tortillas
  • 1 box linguine
  • Tomato paste
  • Hot sauce (whichever is your favorite)
  • Hoisin sauce
  • Mirin
  • Fish sauce
  • Rice vinegar (unseasoned)
  • Sesame oil
  • Sesame seeds
  • 1 cup roasted peanuts
  • Reduced-fat sour cream (small container)
  • Cotija cheese (or other cheese of your choice), optional
  • 1 cup buttermilk
  • 4 6-ounce pieces arctic char, skin on
  • 1/2 pound peeled and deveined medium or large shrimp
  • 2 pounds flank steak
  • 4 boneless, skin-on chicken thighs
