Today’s recipe on Rachael Ray’s 30 Minute Meals was "Bacon Wrapped Blue Cheese Stuffed Chicken, Green Beans and Smashed Potatoes with Green Onions. Sounds tasty to me!! The most complicated part about this recipe is that you have to stuff the chicken breasts, which means slicing the breasts open a little bit and making a pocket for the blue cheese, arugula and baby spinach mixture. Then you wrap them with bacon and bake for about 20 minutes. Chicken breasts can sometimes get a little dry during baking, so wrapping the bacon around them is a great idea. It’s also fantastic way to add a little flavor without too much fat. Smashed potatoes, no problem. Rachael seasoned these with some scallions, chicken stock, salt and pepper. Definitely a healthier choice than the usual butter and sour cream route I prefer. And fresh green beans are one of my favorite vegetables. Frozen and canned just can’t compare.
