My recent post about the gold medals attained by Peruvian pisco at the San Francisco World Spirits Competition this past March reminded me I've had a post about the pisco-making process in a draft version for a very long time. What a good time to finish that post and explain the process for making this definitive Peruvian spirit.Two caveats:First: the photos of the distillation process are by an excellent Lima-based photographer, Lu s Montero.
